Lunch Date...

While traveling in New Jersey, I found Aliperti's Restaurant that offered some gluten free options. The restaurant was cute, food was alright, gluten free options were a bit limited, and portion size was a bit small for their prices. My portion was just fine, but my dad's was a tad bit smaller than I would have expected.

Dad's Cooking

Dad was in for a visit and look what he made....


He threw a little of this and a little of that together and created a wonderful dish. And for dessert, WATERMELON!!

Happy Easter!!

This Easter the family was split in half. My oldest sister and  I spent Easter with my mother and her parents. While the twin and youngest sister and my dad spent Easter with his parents.

Of course we colored eggs. Finally, we figured out how to give brown eggs a nice color. Too bad my mom lost the purple coloring mix, hence why most of our eggs are blue and green! :D





For Easter dinner we made a porcini mushroom risotto, black forest ham, deviled eggs ( my mom forgot to color them for Easter), and lemon steamed vegetables.




Dried Watermelon

I decided to try dried watermelon and found it on igourmet.com!
Verdict: Very sweet and not really the expected "watermelon" taste. It also looks like a piece of raw meat and rather gooey, but still good.

Green Room Bistro, Carlisle PA

The Green Room is able to make almost any meal gluten free! My pick, Curried Chicken Salad--Roasted free-range chicken, bacon, curry, apples, apricots, celery, aioli, gluten free cinnamon-raisin bread.

Verdict: My meal was reasonably priced and absolutely delicious! I can't wait to return! 

Amy's Rice Macaroni with Dairy Free Cheeze

What's the verdict on Amy's rice macaroni with dairy free/soy free cheeze? I have to say, for a frozen meal this was delicious! It was creamy, rich, comforting, and surprisingly "cheesy"

Another option thanks to my dad! Vans gluten free waffles! Verdict, better than the french toast sticks. For disliking frozen waffles my entire life, these were pretty good. I slathered them with some sunflower seed butter, honey, and cinnamon.

I am getting ready to leave my parents this evening, so I thought I would share a picture from my morning walk. After the flood we experienced this weekend it left puddles of water for the morning sun to reflect in.

My thought on Glutino's Pad Thai....small portion, dried meat, and definitely a frozen meal. Not something I would choose to purchase again. Not that I would ever tell me dad, the one who purchased it for me. I am very grateful that he was thinking of me and thought I would enjoy it, so of course I told him it was delicious!

On the other hand, my sister did make a delicious looking meal. She made a marinated pork chop mixed it with fried pineapple and banana and then mixed it with some rice noodles. Definitely looked more appetizing than my meal.

Visit Home

I don’t know about anyone else, but traveling home for me is always a very hard thing. I have to bring pre-made food and have to be extremely careful with dishes and microwave use. This trip was a bit unplanned and with the crazy week that I have had, I didn’t have the time to pre-make any food for the visit. So, my parents went shopping. My dad was all proud of himself for his gluten free finds. Today I made some Gluten Free Cinnamon Sticks. Verdict: Pretty good texture, taste isn’t horrible. Final grade you ask? I would give this product a B-


Also, my younger sister that gave up gluten for lent prepared a gluten free mac and cheese :D

GF Mac-N-Cheese Recipe:

Pumpkin Bread

I couldn't wait to try my new sunflower seed butter. I spread some of it on my pumpkin bread, added a touch of honey and sprinkled some cinnamon. YUM!

Not knowing if there is access to a microwave, I decided my best option would be a salad. Using my to-go ware stainless steel food carrier and utensils that my sister got me for Christmas, I made an awesome salad!

A Visit Home

I had a lovely weekend home with my family. The weather was not so nice, but I did fit in the flea market, clothes shopping with the sisters, and some good quality family time :D  I brought with me a number of things to eat, including my gluten free pizza crusts. So, I added some turkey meatballs, sauce, and some rosy goat cheese to top it off. The crust kind of fell apart on me, but the family dog enjoyed it  :D Best part of the visit….being sent home with some fresh picked flowers :D

Smoothie Obsession!

It was a VERY early start to my school day yesterday. I had to be on campus by 7:30am, YIKES! But I did it, and bringing my breakfast with me helped me stay focused and hopefully help me pass the finance exam!!!

Here is what I put in this smoothie:
1 cup of mixed frozen fruit (I used raspberries, blackberries, and pineapple)1 cup of Greek yogurtSome HoneyTablespoon on cocoa powderTablespoon of peanut butterA splash of almond milk

Maggiano's Little Italy

Maggianos was a success. I ordered the chicken pesto pasta. They replaced the usual linguini with gluten free corn pasta! Delicious!

Turning a failure into a success…

I started off making pumpkin pancakes, but when they kept sticking to the pan and just not cooking the way I preferred, I poured my batter into a bread loaf and make pumpkin bread, YUMMY!





                                What to do with extra pumpkin? Make pumpkin rice pudding!!!

Breakfast for Lunch? Don’t mind if I do!

Vegetable soup

Everything but the kitchen sink is included in this soup! I cleaned out my fridge and made a comforting soup for dinner, yum! This is officially my second experience with kale, and it is quickly becoming a staple in my kitchen!

I found and old recipe of mine, so the picture quality is horrible, but thought I would share the recipe.
Strawberry Orange Cornmeal Muffins

Ingredients:

* 1/2 cup of honey * Zest of 1 orange * 1 cup cornmeal * 2 teaspoons baking powder * 1 beaten egg * 1 cup soy milk (or any milk alternative) * 1 cup gluten free flour mix  * 1 cup of chopped strawberries
**Mix all ingredients together. Cook at 400 degrees for 30-40 minutes. Once they are cooked squeeze some fresh orange juice and cinnamon over them
