Gluten Free Dinner Under 30 Part 6 - Mardi Gras

Red Beans Salad Ingredients: Onion, celery, Tomatoes, Pepper, Garlic, Red pepper spice, Oregano, Thyme, Parsley, Olive Oil, Spices, lettuce, and red beans. Heat up the onions, garlic, celery, and pepper. Mix in some seasoning. Once everything is evenly cooked, and the red beans and season to taste. Once heated, pile on top of a bed of lettuce and enjoy. 
Hurrican # 5. Mom found this on her trip to Florida. One of the most flavorful wines I have ever had.

HUMMUS ADDICTION Part II

I used the basic ingredients of hummus - Chickpeas, tahini, and lemon. I of course added a ton of garlic to each variety of hummus and some cilantro as well. Both varieties came our delicious but I enjoy the extra kick so I preferred the roasted red pepper.

They are right, once you make your own hummus, there is no need to ever buy it again!

Gluten Free Dinner Under 30 Part 5

Each week, a girl friend of mine and I pick something to look forward to. You know, just a little something to keep our hopes up throughout the crazy work week. This week we decided to make a nice dinner - yes this means with our schedule that the dinner will be closer to 9:30 -10:00pm, but still its a nice dinner to look forward to. 
Having a ton of grass-fed beef still in my freezer, we decided we would make something with the ground beef.  Thoughts included: burgers, meatloaf, tacos, and meatballs. Meatballs was a unanimous win; the real question then came, meatballs with what? At first, the thought was pasta, but then quickly changed to meatball subs! Great idea because the meal came out terrific! 
Ingredients: Grass-fed beef, onions, garlic (and lots of it), olive oil, polenta, eggs, rosemary, fresh cilantro, ground pepper, and whatever else you want to through into the pot.

Simply mix the ingredients together. Then place in a pan with some water, cover and let cook until done.

HUMMUS ADDICTION

Sorry for the lack of communication once again - work has been consuming my life. I put in close to 300 hours for the month of January - YIKES!

The company has been great through all of the craziness thought - we have had provided lunches for some time now. Lucky me, most of the lunches were ordered from Main Line Pizza, Wayne, PA. I found Main Line Pizza sometime back, but this time I ordered their Hummus Wrap with a GF flatbread! Delicious!


I remove the feta cheese (for the tummy's sake) and I enjoy the peppers, cucumbers, tomato and spinach drenched in what seems like an entire container of hummus! I ordered this meal 3 days in a row -- and I hate repeat meals.
