Birthday Celebrations!!!

This wine seriously tastes like apple cider. You can drink this wine ice cold, room temperature, or even warm. I like it warm the best! 

You think Mia and I would learn to wear flats at the Casino, those old ladies came prepared in their flats and where willing and able to run us over for their first choice of the slots! 
Of course birthday celebrations have become weekends full of love and laughter, too much wine, and can't forget the cake! That's right, gluten free doesn't mean taste-less! You will love this flour-less chocolate cake. 

Flourless Rum Cake:

6 ounces (1 cup) dark or semisweet chocolate, coarsely chopped 

1/2 cup butter, cubed  1/2 cup sugar  4 large eggs  1 1/2 teaspoon vanilla extract 1/2 cup cocoa powder 1/3 cup dark or light rum

Preheat oven to 375 degrees F (190 degrees C). Grease an 8-inch baking pan and set aside.

While work is still rather busy, I found myself stressing out and taking to heart others's opinions; so much that I found myself cancelling all of my St. Patrick's day plans and heading home to a weekend with my parents. I look back at it now and say, "I really did just run home to mommy and daddy". But, you know what, I am not ashamed of doing so. Every-now-and-then, a girl needs her daddy.

Mia came to the rescue as well as a family friend - we celebrated St. Patrick's day with a movie, green popcorn, and homemade green wine; well semi-homemade ;D That's right, we are drinking out of mugs!

Instructions on how to make green wine:
1. Get a decent bottle of white wine
2. Mix in gluten free green food coloring.
It's a simple as that. Be careful not to get the food coloring all over the place and enjoy!

Lazy Sunday

Seeing as how I don't know what work is going to become once April 1st rolls around - I am trying my best to get family time in NOW!

The little sister asked that I come home this past weekend so that I could meet her boyfriend and help put together a nice dinner. Of course I moved around some plans and made every effort to be home for her. Friday's drive home was anything but fun - traffic and pouring rain. Honestly, it seems as if I bring all the crazy weather to my parent's house. Friday we were looking like another flood and then Sunday we were looking like a snow storm --hmmm. Anyhow, while home I enjoyed at in-home spa and movie day with the sisters and cooked a lot of great food!

Quick and Easy Burgers 
*Grass-fed Ground beef
*Seasonings (Garlic, oregano, rosemary, red pepper flakes, etc)
*GF Bread crumbs or polenta

Toss them on the grill and you are good to go!

Monday always comes too fast. I miss the time I could be spending with the family.
