Weekend with the Family

I wasn't sure I was going to make it to the weekend, but I did. After a long week at work, family time is just want I needed.

I got into my parents pretty late on Friday night and then was up at the butt-crack-of-dawn to drive about another hour and a half to Penn State Mont Alto where the little one is. Exhausted as I was, I was determined to attend Cory's 5K walk/run. Thank God the walking part was an option ;D

After the run (cough cough walk) Mia, Matt (her boyfriend) and myself headed out. We toured around the area a bit and then we headed to the Pet Shop. This pet shop allowed you to take out the puppies and play with them. We choice an adorable English Bulldog. HA adorable? The store employees nicknames this dog "Frank the Tank". Not a good start to this puppy play date. The girl brought him over and immediately Frank started legit eating Mia. Forget her clothes and shoes, the skin must have tasted better. We felt bad but we made them put Frank back in his cage…

Mashed Cauliflower

Craving mashed potatoes, but don't have any on hand? No worries, just use cauliflower.


- 1 package frozen cauliflower
- Jalapeno
- Garlic
- Kale
- Rosemary
- Red onion

Microwave the frozen cauliflower until well cooked. Place in a food processor with remaining ingredients.


Green Hummus

With hummus being my most recent addiction, I have decided to start creating the most ridiculous, yet surprisingly delicious, hummus recipes!

First try -- Green Hummus.

This hummus turned out great and was used as a salad dressing all week!

How to make zucchini Hummus:
- Zucchini
- Tahini
- Garlic
- Jalapeno
- Paprika
- Salt and Pepper

Mix it all up in a food processor and Tada!

P.S No measuring was used during this creation. Just toss in what you think looks good and enjoy!

Christopher's, Wayne, PA

Christopher's, in Wayne, PA, while there food always looks amazing, (maybe I am ordering the wrong thing) I always find myself disappointed.

Last night I met up with a couple of friends for dinner and upon the waiters recommendation, I ordered the pulled pork sandwich minus the bread (they do offer GF bread for an extra charge), saffron rice, and broccoli. The meal was charged the full price, as if it included the bread. I was served only 3 rather small pieces of broccoli and both the pulled pork and the rice where bland. To top off my frustration, the pork was dry. This is the exact reason, I have come to hate eating out....the food is always over priced, tasteless, and overcooked. 
This was my second trip to Christopher's and I must say, it will likely be my last.
